Assumption University of Thailand (AU) ’s Theophane Venard School of Food Biotechnology and Innovation welcomed Prof. Dr. Glenn Young, Food Safety Professor Emeritus from the University of California, Davis, as a guest lecturer for FT 3115 Food Safety and Microbiology Technology, on July 7, 2026.
The guest lecture gave FBI students the opportunity to learn from a leading international scholar whose work has focused on food safety, infectious disease microbiology, and the science behind foodborne pathogens. Prof. Dr. Young brought decades of academic, research, and international education experience to the classroom, helping students connect microbiology theory with the real-world systems that protect food quality, public health, and consumer confidence.
As Professor Emeritus in the Department of Food Science and Technology at UC Davis, Prof. Dr. Young has contributed to research on how significant foodborne pathogens cause disease in humans and survive in the environment. His research group studied the molecular biology, genetics, and physiology of pathogenic bacteria including Escherichia coli, Salmonella, Yersinia, Listeria monocytogenes, and Bacillus species.
For students in FT 3115, the session offered a valuable bridge between classroom learning and professional practice. Food safety is more than a technical subject; it is a global responsibility that affects farms, factories, laboratories, restaurants, regulators, and families. Through the lecture, students gained a deeper understanding of how food microbiology supports safer food systems and strengthens the future of food biotechnology and innovation.
Prof. Dr. Young’s academic work has also reflected a strong international outlook. UC Davis has identified him as Professor Emeritus in Food Science and Technology, with research interests including Type III protein secretion in Yersinia. His professional contributions have extended beyond the United States, including meaningful collaboration in Southeast Asia. In 2016, he received a Medal of Honor from the government of Ho Chi Minh City, Vietnam, in recognition of his role in helping develop food technology curriculum through collaboration with Nong Lam University.
The lecture reflected the Theophane Venard School of Food Biotechnology and Innovation’s commitment to bringing global expertise into AU classrooms. By welcoming a distinguished food safety scholar from UC Davis, the School gave students direct access to international knowledge, practical insight, and the kind of scientific perspective needed in today’s food industry.
The visit also highlighted AU’s continued focus on international academic engagement. Through guest lectures, partnerships, and expert-led learning experiences, AU continued to prepare students to think beyond the textbook and apply their knowledge to challenges that matter locally, regionally, and globally.
From microbes to management, the message was clear: food safety may begin in the laboratory, but its impact reaches every table.
