Assumption University proudly announces the remarkable success of The Protein Ice Team from Theophane Vernard School of Biotechnology. Their groundbreaking project, "Protein Ice," has secured a prestigious Albert Prize Award of National Academic Achievement. Additionally, these talented students have also been named among the top 60 finalists in the Plate to Planet Competition, hosted by APEC 2022 Thailand: Future Food for Sustainability. Led by Ms. Selene Vate-U-Lan, Ms. Safia Yupensuk, Mr. David Oum, and Mr. Kosol Poch, the Protein Ice Project epitomizes Assumption University's culture of ingenuity and forward-thinking.

Protein-ICE: A Revolutionary Plant-Based Delight
The Protein-ICE project introduces an innovative freeze-dried ice cream crafted primarily from Thai Green Caviar, a plant-based protein source. This cutting-edge creation not only tantalizes the taste buds but also boasts a high protein content, making it a guilt-free indulgence. The incorporation of Thai Green Caviar not only enhances nutritional value but also supports environmental sustainability through its eco-friendly cultivation process.



The Protein Ice Team entering their product at the Plate to Planet Competition, hosted by APEC 2022 Thailand: Future Food for Sustainability, is a testament to their brilliance. In the face of stiff competition, with a staggering 2,018 menu submissions from participants across Thailand, Protein Ice emerged as a beacon of innovation, reflecting their dedication to crafting food products aligned with future sustainability goals.


 

 



Reflecting on their triumphs, Ms. Selene shared, "Our success in the Plate to Planet competition and the Albert Prize Award fills us with immense pride and excitement. It validates our dedication and innovative approach to shaping a future food product that resonates with our core values of health, sustainability, and community impact."

The driving force behind the Protein Ice project was a shared vision, to create a culinary innovation that prioritizes the welfare of the Earth, consumer health, and community enterprise. This visionary goal led them to overcome various challenges, including a critical malfunction in their freeze-dried machine just before a pivotal competition. Ms. Safia explained, "This setback taught us the significance of meticulous equipment checks and comprehensive planning. It underscored the importance of addressing vulnerabilities early on to ensure seamless operations during competitive events."



Championing Innovation and Sustainability

Mr. David emphasized the message they hope to convey, stating, "Through our project, we aspire to highlight that groundbreaking and sustainable food solutions can seamlessly combine scrumptiousness and positive impact on both individuals and the environment. We intend to ignite creative thinking around food production, encouraging choices that uphold health, well-being, and planetary welfare." Mr. Kosol added, "Our journey underscores the importance of resilience in the face of challenges and the necessity of embracing change for a brighter tomorrow."
