On-site Visit of Community EnterprisesAssumption University has visited 4 Community Enterprises who participated in the OPOAI-C project at Ratchaburi province on Oct 5, 2021. The third stop was at Community Enterprise of Mae Ban at Pong Krating (Mae Oy Tin) (วิสาหกิจชุมชนกลุ่มแม่บ้านโป่งกระทิง (แม่อ้อยถิ่น)). Community Enterprise of Mae Ban at Pong Krating (Mae Oy Tin) is well known in their juicy and succulent pineapples know as Ban Ka variety pineapples. Their products have been commercially distributed to Bangkok and Metropolitan area in the fresh-cut forms. The group learned one thing that providing fresh-cut pineapples have created much waste from the chunky core of the pineapples. However, this is the part that contains one of the functional nutrients people seem to be lacking nowadays, the fiber.


Community Enterprise of Mae Ban at Pong Krating (Mae Oy Tin) has joined the OPOAI-C project with intention to develop a new product using the pineapple cores, waste from the fresh-cut process, to increase its value, zero-waste concept complying BCG model policy. Asst. Prof. Dr. Patchanee Yasin, Dean of Theophane Venard School of Biotechnology, Assumption University has supervised the consult and development. The new product developed is crispy pineapple fiber, an innovative snack for the future offering high fiber.
