Theophane Venard School of Food Biotechnology and Innovation (FBI) hosted Mr. Chanapol for a milk innovation talk.
Assumption University of Thailand welcomed Mr. Chanapol Tantakosol, CEO of MUU, as a guest speaker for a session titled “Milk Protein Innovation” on 16 February 2026. Hosted by the Theophane Venard School of Food Biotechnology and Innovation (FBI), the talk gave students a timely look at how food science is being reimagined through new production methods that aim to reduce reliance on conventional dairy systems.
MUU, an agrifood startup based in Bangkok, has been developing animal-free dairy proteins using precision fermentation, a process that uses microbes and controlled fermentation to produce proteins such as casein and whey. Those proteins can then be applied in the development of vegan dairy-style products, with the goal of matching the taste and functionality people expect from traditional dairy.
In the session, the discussion highlighted why “milk” has become one of the most interesting battlegrounds in modern food innovation. For consumers, it is personal, tied to health, taste, and habits. For the industry, it is strategic, tied to supply chains, sustainability pressures, and the race to scale alternatives that can perform in real kitchens and real products.
The event supported learning across several courses, including FT 4144 Food Ingredients Functionality, FT 3114 Functional Foods for Health, FT 6189 Experimental Designs and Statistics Analysis, and FB 5109C Graduate Seminar. By bringing an industry leader into the classroom, the School reinforced its commitment to applied, future-facing education, where students can connect core science to emerging technologies and the practical realities of production.
For students, the takeaway was not just that dairy alternatives exist, but that the future of food may hinge on the details. Process control. Protein performance. Consumer acceptance. And the hard work of scaling an idea into something people can actually buy, use, and trust.
